Sprightly Sauntering Onward… And An Easter Egg-plant Recipe…


Nature is cheerful. The weather is warmer and life is displaying its vitality. And it’s time for more delightful eats and treats. During preceding occasions, I introduced a new plant based culinary dish to my family and friends. Enjoyable vegetable based main entrees. Easter is arriving, so I want to share another vegetable based main entree recipe I know you’ll love.

Vegetables are used in myriad ways and are embraced by many cultures. They can be eaten raw or heated. Un-heated they are decorative and naturally delicious. Heated they are still yummy and can be prepared with or without other foods and/or fixings. This recipe I used for heated eggplants will bring more life to your tastebuds.

Baked Eggplant w/ Mushroom Dressing, Mushroom Bacon, Roasted Red Bell Peppers and Brown Gravy

  • Fresh halved eggplants
  • Homemade mushroom stuffing using Ezekiel Bread Ends/Crrumbs
  • Mushroom bacon (seasoned and baked sliced mushrooms)
  • Roasted red peppers (sliced, seasoned and baked or broiled red bell peppers)
  • Homemade brown gravy

After slicing eggplants into halves length wise baste each side with a dressing of olive oil, vegan butter, soy sauce, Worcestershire sauce, agave or any natural sweetener, Herbamare, black pepper, onion and garlic powders and smoked paprika. Once eggplant halves are completely coated with the dressing bake at 350 degrees Fahrenheit for approximately 45 minutes to an hour or until tender. When eggplant halves are tender, top with mushroom dressing/stuffing, mushroom bacon, roasted red bell peppers and drizzle on brown gravy. Add garnish to further embellish your dish.

Eggplants can be for any occasion, as delectable appetizers or primary plates. If you decide to create this eggplant recipe, you can make it an appetizer or primary dish. I’ve yet to make all of the eggplant recipes I have either in mind or written, nonetheless I will. I’ll too unearth more of my own new recipes to share.

As I am sprightly sauntering onward toward more exceptional culinary and cultural experiences, I intend to introduce to others who love food recipes you’ll want to try. Some of these recipes will be my own innovative ideas and others will be those I’ve learned about and made. Either will make for a magical experience, simply because creative food art is magical and will indeed be delightful.
