I have been enjoying the absolutely yummy dishes we’ve had during the holidays. Each year it’s something different and, of course, plant based. For Thanksgiving 2o25 we decided to have stuffed portobello mushrooms with homemade stuffing, sweet leeks and savory and crispy vegan sausage for our main plate (see below). We’ve had stuffed portobello mushrooms many times before and for various occasions, but this year we complimented our stuffed mushrooms with a delightful salad. Salads were the featured dishes for this Thanksgiving, therefore, I shared a variety of warm and cool salads I’ve prepared and made for past meals (see previous blog post).

Thanksgiving 2025 has now passed, yet we are still celebrating the upcoming holidays. A light, bright and colorful salad was presented with our stuffed mushrooms on our Thanksgiving dinner table (see below). Included as part of our salad was a fruity sweet treat I am sure many enjoy. The gorgeous, beautifully splendid and delectable pomegranate and its seeds (see above and below). The seeds and juice of the pomegranate fruit have uplifted several of our meals, both savory and sweet. And they too have brought out more of our dishes natural qualities.

To inspire you as you prepare your own holiday meals, I have included images of recent food plates, the above brunch apple strawberry bread pudding and mixed vegetable salad and the below stuffed mushroom and vegetable pastry roll with pomegranate seeds and/or the juice.
